What is light, crisp, and naturally sparkling? That's right, we are talking about Pétillant Naturel—or Pet-Nat for short.
Despite its recent surge in popularity, Pet-Nat is nothing new. In fact, its origins predate Champagne. These former "punk" wines have now evolved into a highly respected and serious category.
The wines are bottled before primary alcoholic fermentation is complete, while still containing a few grams of residual sugar. As fermentation finishes inside the bottle, it naturally creates CO2 (delicate bubbles) and pressure, which eliminates the need to add sulfur. Over time, the sugar is fully consumed, leaving the wine bone-dry. However, because Pet-Nat contains active yeast cells that carry a subtle sweetness, the wine never tastes aggressively dry.
A similar process happens with the acidity. While tartaric acid remains stable, malic acid undergoes malolactic fermentation inside the bottle, metabolizing into smoother lactic acid, which lowers the overall perceived acidity. For these reasons, residual sugar and acidity values are usually omitted from the wine's specifications; any figures provided by the winemaker are not constant and will decrease over time.
Crucial advice to close:
When opening a Pet-Nat, do not shake it, do not bang it, and always serve it thoroughly chilled to a maximum of 5°C. If this is your very first Pet-Nat, we strongly recommend opening it over the sink or out on the balcony. Alternatively, place the bottle in the freezer for 1–2 hours before serving, pop the cap quickly, and pour it into glasses right away. This keeps you and your living room clean and dry, ensuring your first Pet-Nat experience is memorable for all the right reasons!
