A rosé is a wine made from blue grape varieties. It has been known since the time of Hippocrates, and in the Middle Ages it was called 'the wine of one night'. Rosé is usually best consumed young, in the summer months, but in recent years, deeper, mostly dry rosé wines have also become popular abroad, which benefit from longer ageing. Because of the lightness of white wine and the distinctive notes of red wine, rosé is also gaining popularity among vegetarians and vegans, for whom 'rosés' are better suited to vegetable dishes.
