Pairs well with: seafood, starters, fish soups, molluscs and crustaceans, baked fish and white meat.

Origin and history of the variety:
Grillo is a white grape variety, particularly widespread in western Sicily. Its probable origin is indicated by what Baron Mendola wrote in 1874: ‘Seeds of the white Catarratto variety were artificially fertilised with Zibibbo during the flowering period in 1869 in my Piana dei Peri vineyard near Favara.’ In 1904, he also wrote: ‘I crossed the common Sicilian Catarratto variety with Zibibbo to create a more aromatic Marsala.’ Grillo originated in the Marsala region and subsequently spread to other provinces on the island. Grillo is capable of producing wines with a high alcohol content and is particularly well-suited to ageing. The finest Marsala is produced from the Grillo grape.
