Low-histamine wines are also suitable for people suffering from histamine intolerance. Their production is kept secret by each winemaker, but in general it can be said that the grapes are grown without chemicals, picked by hand and any damaged berries are removed. The whole production process is therefore very clean and the fermentation process (fermentation) is stopped at the right time to prevent histamine from forming. Therefore, the histamine level is very low to zero. This wine then undergoes laboratory testing and if the histamine level is very low to undetectable, it is certified as a low-histamine wine.
In addition, these wines are usually also not sulphited and so contain very low levels of sulphites. The advantage is that if you overdo it a bit with the wine, you won't get a headache the next day. And this is also a very important bendite!
