Prosecco Brut DOC without added sulphites and organic substances fully interprets the philosophy characterized by the desire to respect the environment and eliminate the use of chemicals. The wine comes from the best selection of Glera grapes, healthy and uncontaminated, able to release the best aromas. Light straw yellow colour with greenish and bright highlights. The aroma is harmonious, reminiscent of apple and peach and acacia blossom. The taste is fresh, well balanced, with flavours of golden apples and tropical fruits. Pleasant long-lasting bubbling.

Grape variety: Glera

After selecting the best grapes, the winemaking process provides a traditional and unique white fermentation that starts from must but without the addition of sulfur dioxide. Fermentation is then activated with selected yeasts that produce little sulphur dioxide and takes place at a controlled temperature of approximately 14°C. All this takes place in steel autoclaves for about two months, where the pressure is above 4,5 atm; it is then filtered.

The entire range of unsulphurised wines is labelled with recycled paper, which is made from 15% of the winery's own grape pomace, with the remaining paper containing 40% recycled fibre and 45% virgin cellulose. The dragonfly speaks volumes about this line. The dragonfly is a testament to the purity and naturalness of these wines without added sulphites. It is precisely because of its green philosophy, respect for the health of consumers and the desire to confirm its willingness to experiment and grow over time that the winery has been producing a line of wines without added sulphites since 2007.
